My Daily Act :: I’ve really been trying to expand my veggie repertoire lately. Tonight’s new thing – butternut squash – was something I’ve eaten before but never prepared. Butternut squash, roasted with brussel sprouts, carrots, and red onion. Then tossed with white wine vinegar and basil. It was wonderful!
It’s paying off in a bigger way, too… in a week’s time, my little one has eaten, and loved, sauteed spinach, brussels sprouts, mustard greens, butternut squash, and basil.
(And, thanks to spell check, I just learned that it is “brussels sprouts” not “brussel sprouts”. Who knew?!)
